SHRIMPS TOSTADAS AND CHIPOTLE MAYO

 

INGREDIENTS

Serves 6

  • 1 package of Buena Vista Tostadas

  • 1.5 lb. of cleaned shrimp

  • 4 sliced garlic cloves

  • ½ diced white onion

  • ¼ sliced red onion

  • ½ cup of mayonnaise

  • 1 can of chipotle en adobo

  • 1 can of refried beans

  • 1 avocado

  • 1 lemon

  • 1 tablespoon of butter

  • Vegetable oil

  • Salt and pepper

HOW TO COOK

Melt the butter in a hot pan and add ½ tablespoon of vegetable oil; add the garlic, the shrimps, salt and pepper, and the juice of ½ lemon. Stir constantly until cooked, set aside in a bowl.

Sauté the white onion and add the refried beans with ½ cup of hot water, lower the heat and stir, set aside in a bowl.

In a bowl, mix the mayonnaise, 1/2 lemon juice, one chipotle, and one tablespoon of adobo (if you want the sauce not too hot, only add the adobo), salt, and pepper.

HOW TO SERVE

Place the Buena Vista Tostadas at the center of the table and the bowls with beans, shrimps, and chipotle mayo.

Everyone can build their own tostada by spreading some beans into a tostada, then top with shrimps, a slice of avocado, a slice of red onion, and some chipotle mayo.
