CHIPOTLE SHRIMP TACOS
INGREDIENTS
For Chipotle Shrimp:
1 pound of large shrimp, peeled and deveined
2 tablespoons of olive oil
2 cloves of garlic, minced
1 chipotle pepper in adobo sauce, minced
1 teaspoon of adobo sauce (from the can of chipotle peppers)
1 teaspoon of ground cumin
1 teaspoon of smoked paprika
Salt and pepper to taste
For the taco assembly:
1 package of TORTILLA TAQUERA NIXTAMALIZADA MI FAMILIA
1 cup of diced tomatoes
1/2 cup of diced red onion
1/4 cup of chopped fresh cilantro
1/4 cup of sliced red cabbage
Lime wedges, and chipotle mayo for serving
Optional toppings: sliced avocado
HOW TO COOK
1. In a medium-sized bowl, combine the olive oil, minced garlic, minced chipotle pepper, adobo sauce, cumin, smoked paprika, salt, and pepper. Mix well to create a marinade.
2. Add the shrimp to the marinade and toss until they are evenly coated. Allow the shrimp to marinate for about 15 minutes to allow the flavors to develop.
3. Preheat a grill or a skillet over medium-high heat. If using a grill, thread the marinated shrimp onto skewers to make them easier to cook. If using a skillet, you can cook them directly.
4. Cook the shrimp for 2-3 minutes per side until they turn pink and opaque. Be careful not to overcook them, as they can become rubbery.
5. Once the shrimp are cooked, remove them from the heat and set them aside.
6. Warm the tortillas on a griddle or skillet for a few seconds on each side until they are soft and pliable.
HOW TO SERVE
1. To assemble the tacos, place some chipotle shrimp and then add the sliced red cabbage and chopped cilantro. Squeeze fresh lime juice over the toppings.
2. If desired, add optional toppings such as sliced avocado or hot sauce.
