CRISPY POTATO TACOS DORADOS

 

INGREDIENTS

  • Ingredients:

    • 1 package of TORTILLAS AMARILLAS BUENA VISTA

    • 4 medium-sized potatoes

    • 1 small onion, finely chopped

    • 2 garlic cloves, minced

    • 1 teaspoon cumin powder

    • 1 teaspoon chili powder

    • 1/2 teaspoon paprika

    • Salt and pepper, to taste

    • Vegetable oil, for frying

    • Sliced lettuce and radish, for garnish

    • Salsa, guacamole, crema, or your favorite taco toppings (optional)

HOW TO COOK

1.     Boil the Potatoes: Start by boiling the potatoes in a pot of salted water until they are fork-tender. Drain the potatoes, let them cool, and then peel and dice them into small cubes.

2.     Sauté the Aromatics: In a large skillet, heat a tablespoon of vegetable oil over medium heat. Add the finely chopped onion and minced garlic to the skillet and sauté until they become translucent and fragrant.

3.     Season the Potatoes: Add the diced potatoes to the skillet with the sautéed onion and garlic. Sprinkle cumin powder, chili powder, paprika, salt, and pepper over the potatoes. Stir well to evenly coat the potatoes with the spices. Cook for an additional 2-3 minutes, allowing the flavors to meld together. Remove from heat and let the potato filling cool slightly.

4.     Assemble the Tacos: Take a corn tortilla and place a spoonful of the seasoned potato filling in the center. Fold the tortilla in half to enclose the filling, creating a half-moon shape. Press the edges firmly to ensure they stick together.

5.     Fry the Tacos: In a deep skillet or a pan, heat enough vegetable oil to shallow fry the tacos. Once the oil is hot, carefully place the filled tacos in the skillet, seam side down. Fry them for approximately 2-3 minutes on each side or until golden brown and crispy. Use tongs to flip the tacos gently.

6.     Drain and Garnish: Once the tacos are golden and crispy, transfer them to a paper towel-lined plate or wire rack to drain any excess oil. Repeat the frying process with the remaining tacos.

HOW TO SERVE

Serve and Enjoy: Arrange the crispy Potato Tacos Dorados on a serving platter. Garnish with lettuce and radish. For an extra touch, serve with your favorite salsa, guacamole, or crema.
