MEXICAN STYLE SHRIMP COCKTAIL TOSTADAS
INGREDIENTS
Buena Vista Multigrain Baked Tostadas
1 pound (450 g) large shrimp, peeled and deveined
1 cup ketchup
1/4 cup fresh lemon juice
1/4 cup clam and tomato juice
1/4 cup fresh cilantro, chopped
1/2 red onion, finely chopped
1 ripe avocado, diced
1 medium tomato, diced
1 jalapeño pepper, seeded and finely chopped
1 clove garlic, minced
1 teaspoon hot sauce (optional)
Salt and pepper to taste
HOW TO COOK
1. In a large saucepan, bring salted water to a boil. Add the shrimp and cook for 2–3 minutes until they are pink and cooked through. Drain and cool the shrimp in cold water to stop the cooking process. Then, chop the shrimp into pieces and set aside
2. In a large bowl, mix the ketchup, lemon juice, clam juice, cilantro, red onion, avocado, tomato, jalapeño pepper, garlic, and hot sauce (if using). Mix well and season with salt and pepper to taste.
3. Add the chopped shrimp to the mixture and gently stir to combine all the ingredients.
4. Place a generous spoonful of the shrimp mixture on each Buena Vista Multigrain Baked Tostada.
