A LA MEXICANA SCRAMBLED EGGS TOSTADAS

 

INGREDIENTS

Serves 2

  • Ingredients:

    • 1 Pack of Baked Tostadas Buena Vista

    • 4 eggs

    • 2 tomatoes

    • ½ white onion

    • 1 jalapeño pepper

    • 1 avocado

    • Some coriander leaves

    • 1 can of refried beans

HOW TO COOK

Dice the onion and the jalapeño, and mince the tomatoes.

Heat a medium pan and sauté the onion and the jalapeño.

Wisk the eggs in a bowl with salt and pepper.

Add the tomatoes to the onion and chile, then mix.

Add the eggs and mix carefully from the edges of the pan towards the center.

Cook the refried beans with some sauteed onion.

HOW TO SERVE

Place a bunch of Baked Tostadas Buena Vista at the center of the table, next to the A la Mexicana Scrambled Eggs and the avocado. Put some refried beans on each plate and let everybody make their tostadas by topping some eggs, avocado, and coriander leaves.
