GUACAMOLE AND MUSHROOMS TOSTADAS

 

INGREDIENTS

Serves 6

-      1 pack of Baked Buena Vista Tostadas

-      4 big avocados

-      ½ withe or red onion

-      2 big tomatoes

-      1 bunch of coriander

-      12 white mushrooms

-      ½ red cabbage

-      1 lime

-      Olive oil

-      Salt and pepper

HOW TO COOK

Guacamole: Cut the avocados in halves and remove the peep; with a spoon, separate the pulp from the peel and put them into a bowl, add some salt and pepper, and smash them, squeeze the lime.

Finely dice the tomatoes and the onion, chop the coriander, add it to the smashed avocados and mix.

Cut the mushrooms and the red cabbage into thin slices, then put them in separate bowls.

HOW TO SERVE

Place the Buena Vista Baked Tostadas at the center of the table and the bowls with the guacamole, the mushrooms, and cabbage.

Everyone can build their own tostada by spreading some guacamole into the tostada, and the mushrooms and cabbage slices on top, add some olive oil.
